For years he was involved in a meat packing house in Charleston, IL,with his father. They were subjects of a newspaper article and photowhile at the Wessex Saddleback Assoc meeting giving a meat cuttingdemonstration.

Joe and Doris spoiled the entire family while running the packinghouse. They accepted orders for X dollars worth of meat, rather thanfor specific cuts and weights. They always considered the size of thefamily when filling the orders, sending different varieties from orderto order, and occasionally throwing in, for free, extra packages ofmeat they needed to move. Following the plant's closing, no one knewhow much meat it took to feed their families nor what cuts to orderfor daily meals. There was a lot of trial and error before everyonereturned to being normal customers.

Later, Joe later bought a gas station and also ran a trucking businessin Mattoon, with son, Danny, being one of the drivers.
